Grape Almond Chicken Salad

Hello yummy fresh summer chicken salad! I ate this ate Panera the other day and I thought I would try to recreate it. All I can say is YUMMMMMM! Easy to make in large batches and can be used in a sandwich, wrap, on a salad, as a dip etc. Definitely try this one out!


Ingredients


  • 4 cups chicken

  • 1 cup grapes, halved

  • 1/2 cup sliced almonds

  • 1 cup plain greek yogurt

  • 1/2 cup chopped celery

  • lemon juice to taste

  • salt & pepper to taste

  • honey to taste


Directions

  • I addead chicken breast to the Instapot for about 30 minutes with chicken broth so it would shred easily.

  • Add all ingredients to a big bowl and mix. Add more greek yogurt if you want to make it creamier. I added a little honey at the end to make it sweeter.

  • Top with spinach mix and a sliced tomato.


Very easy to prepare and then save for quick meals or snacks later. No reheating and little prep time!
