It is FALL! That means bring on all the chili recipes. This one is one of my favorite healthy meal prep recipes for the fall. The preparation is easy and it is yummy each time you reheat it. Try it out next time you want a nice fall recipe!
Ingredients
2 lbs chicken
6 cups chicken broth
1 cup plain greek yogurt (low-fat)
1 tbsp olive oil
2 cans strained and rinsed corn
2 cans strained and rinsed black beans
2 cans strained and rinsed white beans
3 garlic cloves minced
salt and pepper
cumin
garlic powder
chili powder
Directions
I placed the chicken breast in the Instapot (if you cook raw chicken in with the chili, you will have to shred it after)
Put all ingredients in and set Instapot on high for 20 minutes
Once it is finished, I placed the chili in open Tupperware to cool slightly. I then added another 1 cup of plain greek yogurt to the cooled chili to make it a thicker creamier. You also can add low-fat cottage cheese to give it a thicker texture if you’d like.
